Well I finsihed my playing around with the A/V connector and various options. It looks like I did get it to put out RGB, as my Viewsonic P815 monitor sync'd on green and displayed a stable 640x480 picture. The problem was that the screen was very green (red and blue were both present and displaying some color, not enough to force any white balance), and the picture would only sync while in 640x480, once the xbox tried going to a different mode (after the intro screen with no DVD in) it just blanked and seemed to not generate a sync signal anymore. But on the flip side if I had a game in (halo for instance) it allowed me to play at 640x480 (albeit still extremely green).
But for the efforts of the various settings with teh A/V connector I did find there is +12v and +5v availableon the connector and there are two more pins that are unknown (pins 4 and 16) but they do follow the same type of signal used by pins 5-7 and pins 17-19, so they may be used to select some sort of option, but I did try every combination of pins 4-7 and 16-19 (as in all, none, one at a time, in pairs, etc...) and could not find any other mode that would display on the monitor (only 5-17 and 7-19 would display a sync'd image as mentioned above).
But here is my contribution to the effort, all of the packs diagrammed and a composite of all the pinouts with options that I know of: (best viewd in a fixed font)
